Potato-1,boiled and cut into small cubes
Tamarind paste or lemon juice-1tbsp
Salt as per taste
Heat oil in a pan.Roast cumin seeds.Add in the onion,ginger and garlic.Sprinkle some salt.Allow the onion to cook well.Add in the chopped tomatoes and potatoes followed by the powdered spices.When the raw smell is gone.Stir in the tamarind paste or lemon juice.Pour in the pureed spinach with a glass of water.Drop in the eggs.Allow to cook for 5 mins.To serve halve the eggs and allow it to sit on top of the gravy.
Serve with rice or rotis!!!!!
