Xmas Fruit Cake

Self raising flour-11/2cup
Brown/White sugar-1cup,powdered
White sugar-25gms
Vanilla essence-1tsp
Rum essence-1tsp
Mixed dry fruits and nuts-1/2 cup, coat with 1tbsp of flour

Powder the spices together.Heat a pan.Add 25gms sugar and let it brown slowly. When it turns brown add the water and stir it well.Pour this  thick syrup in a bowl. Now beat the sugar, salt and butter together.Slowly beat in the eggs one by one.Now add the spices, caramel syrup and the essences one by one and mix well.Add the flour a handful at a time and let it blend together.Lastly add in the dry fruits and fold it into the cake mix.
Bake it at 170-180 deg cel for 60mins or until the fork comes out clean.

*Coating the dry fruits with flour prevents it from sinking to the bottom of the cake.
*Traditionally you soak the dry fruits in rum/brandy for a week.In that case add 2tbsp of  brandy instead of the essence.
