Sweet Orotti

Ingredients;
Rice flour-2cups, roasted
Water-2cups, boiling
Salt to taste
For the filling;
Coconut-1/2 cup, grated
Jaggery-1/2 cup, grated
Cardamom-2 pods, crushed

Mix the salt with the flour.Pour in the boiling hot water and mix well.When it starts to cool down, kead it into a smooth dough.Divide into equal balls.Mix the ingredients for the filling together. Roll out each rice dough balls into flat tortillas.Do not make it too thin.Add a spoonful of filling in the centre of the orotti and fold it over.Heat a pan and place the orotti one by one.Cook each side until it turns crisp.
Serve hot!!!!!
*Do not allow the dough to dry out,cover it with a wet cloth while you are making one orotti.
*You may apply some ghee or oil.
*Traditionally these are placed in banana leaves and placed on the pan with it which adds a nice flavour.

Simple Bread Pudding


Ingredients;
Bread- 3 to 4 slices,brown or white,roughly sliced
Sweet buns-3,roughly cut into pieces (optional)
Eggs-3,beaten
Milk-100mls,lukewarm
Butter-3tbsp,melted
Sugar-1/2cup
Cinnamon-1 inch
Nuts and raisins.


Powder the cinnamon and sugar together.Sieve it into a bowl.Take a baking tray and grease it with butter.Arrange the bread slices in it.Now pour in melted  butter on top.Mix the milk and eggs with the powdered sugar and pour this mix on top of the bread slices.Allow the bread to immerse and soak in the liquid.Sprinkle some rasins and nuts or may be even some seeds on top.Bake at 180 deg cel fane mode for 30 mins.
Serve hot or cold!!!!
You can make it rich by addiing  cream. 
Alcohol may be used if served on special occassions.

Steamed Rice Funnel Cake with Bengalgram Curry


Ingredients for puttu
Rice flour-1cup
Grated coconut-1/2cup
Salt
Water-1/4cup

Roast the rice flour until its lightly coloured and lets out a nice aroma.Cool it and then add the salt and half of the coconut.Mix it and now sprinkle the water little by little and mix it.This is to wet the flour.Boil some water in a puttu maker.Add 1tbsp of coconut and then add the rice flour until ts half full.Add another tbsp of coconut followed by flour.Lastly add the third tablespoon of coconut.Allow this to sit on the steamer.When the steam starts coming from the top,allow it to cook for 2 to 3 mins more.Using the end of a long spoon,demould it into a plate.
Enjoy with curries,bananas,poppadums etc!!!!!!!!
  

Ingredients for Kadala curry;
Kadala/Bengal gram-11.2cup-soaked in salted water overnite
Onion-2 medium sized,finely chopped
Ginger-1tsp,minced
Garlic-1tsp,minced
Curry leaves-2 sprigs
Coconut chips-2tbsp
Shallots-5,finely chopped
Curry leaves-2sprigs
Coriander powder-2tsp
Chilli powder-2tsp
Garam Masala-1/2tsp
Turmeric-1/4tsp
Asafoetida-a pinch
Mustard seeds-1/2tsp
Water-2cups
Oil -3tbsp
Salt as per taste


Wash the lentil well and keep it aside.In a pressure cooker 11/2tbsp of oil and add the onions,ginger and garlic.Saute it well.Now add 1/2tsp of chilli and coriander powder each.Roast it and then add the washed lentil.Add turmeric,salt and water.Close the lid and cook until it releases 4 to 5 whistles.Allow the cooker to cool down before you open it.
In a separate saucepan,dry roast the remaining coriander powder for a minute.Add in the chilli powder and switch of the flame.Add roasted powders,garam masala and asafoetida to the curry and allow it to boil until you get the desired consistency.
For tempering ,heat the remaing ol in a sauce pan,add in the coconut chips.When its golden in colour,splutter the mustards and add in the shallots and curry leaves.Fry until the shallots are browned.Pour this over the curry and let it rest for 5 mins.
Serve with puttu,rice,bread,chappathi!!!

Instant Rava Idli




Ingredients;
Coarse semolina-1cup
Salt-1/4tsp
Curd-4 to 5 tbsp
Carrot-2 grated
Ginger-1tsp,minced
Green chillies-2 minced
Coriander-2sprigs,finely chopped
Asafoetida/Hing-1/4tsp
Mustard seeds-1/4tsp
Cumin seeds-1/2tsp
Chana dal-1tbsp
Ghee or oil-1tbsp
Water-5tbsp


Roast the semolina for 4 to 5 mins.Keep it aside. Heat oil in a pan, add in the mustard seeds and let it splutter.Now add the chana dal and cumin seeds, grated carrots, chillies and minced ginger.Saute it for a minute.Add this mix to the semolina. Pour yogurt and mix well. Add salt as per taste. If the batter is too thick pour 4 to 5 tbsps of water.Pour the batter into idli moulds and steam it for 10 to 12 mins.
Serve hot with sambhar or coconut chutney!!!!!!!!

Croissant French Toast


Ingredients;
Croissants-2,half it lengthwise to make 4
Egg-1
Milk-1oz
Sugar-1tsp
Butter-2tbsp
Oil-1tsp



Beat the milk,egg and sugar together soak the croissants in it.Heat oil on a griddle or a pan ,add butter.When the butter melts,add the soaked croissants on it.Let it cook on both sides until it gets a golden colour.


*Add vanilla,cinnamon or cardamom to the egg mix for flavour.
*Serve with honey.

Egg Dosa/Mutta Dosai

This morning I was checking out the youtube videos to know what happened at the Oxegen fest at Punchestown.After going through few I ended up surfing the cooking videos(It usually ends up in this section) and surely an idea for today morning breakfast was born.My son,a big fan of anything made from EGG was happy that atleast he got something other than weetabix.






Ingredients;
Dosa batter
Egg-equal to the no. of dosas u plan to make.
Pepper powder
Salt
Oil.


Heat a non stick pan.Coat the surface with oil.Now pour a ladle full of the batter and spread it in circular motion like a pancake.Make it as thin as possible.When half done,break one egg at the centre of the dosa and spread it;alt u may leave the yolk intact.Sprinkle some salt and pepper powder.Flip it over and let it cook for few seconds.Roll or fold it out on to a plate.




Best served with coconut chutney or chicken curry.I served it JLT!!!!!!!!!

Garlic and Coriander Buns

Yesssssss!!!!!!!!I made it.....My first attempt to make buns and it did come out well.I have seen this recipe many many many times but its today that I tried it.




Ingredients;
Flour-2cups
Salt-1tsp
Active yeat-1tsp
Sugar-1tsp
Lukewarm water11/2cups
Olive oil-3 to 4 tbsp
For the spread-Mix together
Butter-4tbsp
Garlic-3 cloves,grated
Coriander leaves-4tbsp,minced






Add the yeast and sugar in1/4cup  lukewarm water.Leave it to dissolve and meanwhile add the flour and salt in a bowl.Stir it and then pour the yeast mix and the water.Make a soft dough,apply olive oil on the top and leave it to raise for atleast 2 hours.
Now divide this dough into 3 balls.Flatten each ball with pinroll and apply 1 to 11/2tbsp  butter spread.Fold it like a swiss roll and then cut it into 4.Do this with the rest of dough.Arrange in a tray leaving atleast 1cm of space between the buns.Bake it at 180 deg cel preheated oven for 25 to 30 mins.



Serve with curry of your choice!!!!!!!!!!

Instant Rava Uttappam


Ingredients;
Semolina (Rava)-1 cup
Rice flour-1/2 cup
cumin seeds-11/2tsp
crushed pepper-1tsp
salt as per taste
tomato-1 finely chopped
onion-1tsp,finely chopped
green chiliies-finely chopped
oil-1tsp each uttappam
water-1 to 11/2 cup

Make the batter by mixing semolina,rice flour,cumin seeds,pepper ,salt with water.Heat the pan.Pour in a ladle of the batter.Sprinkle some chopped onion,tomato and green chilli on top.Pour 1tsp of oil around the uttapam.Cook till both sides turn crispy.
Serve hot with chutney of your choice or jlt!!!!!

Kozhukatta (sweet dumplings of rice with coconut and jaggery)

Kozhukattas are made from rice flour but u surely can use wheat flour,ragi flour or all purpose flour instead.I think it tastes better when rice flour is used.




Ingredients;

Rice flour-2cups
Boiling water-11/2 cup
jaggery-3/4cup
grated coconut-1cup
cardamom powder-2tsp
crushed or powdered cumin-1tsp
salt as per taste.

Add the salt and cumin powder into the rice flour.Mix it well.Now add the boiling water stiring the flour. Knead this well.
For the filling Mix together the coconut,jaggery and cardamom powder.apply some oil on the hands.Take a small ball of the dough,flatten it with hands.Put a tbsp of the filling and cover it shaping it into balls.With this amt of flour u can make 11 to 12 kozhukattas.Steam it for 10 to 15 mins.
Serve hot or cold at breakfast or teatime!!!!!!!!!!!!!!!!
