Schezwan Rice Noodles


Ingredients for the Schezwan Sauce:
Dry Red Chillies- 20, deseeded (optional) and soaked in hot water for 30 minutes
Garlic- 10 cloves, finely chopped
Soya sauce-1/4 tsp
Vinegar-1 tsp
Sugar-1 tsp
Powdered Pepper-1/2 tsp
Oil 2 tbsp
Salt as per taste


Drain the red chillies and grind it to a smooth paste. Heat the oil in a pan, add the chopped garlic and allow it to fry for a minute. To this add the chilli paste, soya sauce, vinegar, sugar, pepper and salt. Stir well and allow it to cook on a low flame until oil separates. Store in a glass jar in the fridge.


Ingredients for the fried rice
Rice noodles-150 gms, soaked in cold water for 30 mins
Rice- 1 cup, cooked
Boneless chicken-1 cup, shredded
Eggs-3, scrambled
Onion-1 thinly sliced
Bell peppers-1, thinly sliced
Carrot-1, thinly sliced
Ginger-1 inch, finely chopped
Garlic-4 cloves, finely chopped
Schezwan sauce-2 tbsp
Soya sauce-2 tbsp
Tomato sauce-2 tbsp
Vinegar-1 tbsp
Sesame Oil-3 to 4 tbsp
Salt and Pepper-as per taste


In a wok, heat the oil. Add the ginger and garlic. Stir fry for a minute and then throw in the sliced onion, peppers and carrot. Sprinkle salt and pepper. When the vegetables are crisp add the drained noodles, rice, scrambled eggs and chicken. Pour the sauces and vinegar.Adjust salt as per taste. Allow to cook for 3 to 4 minutes. Stir /Toss well.
Serve hot!!!!

Simple Fried Rice

I love to cook dishes that are quick and easy.I hate recipes that needs 5 to 6 stages or even the ones that needs to be kept away for few weeks or even hours.But I think I am able to wait now cos just a month before I made dates and honey mix and waited for 21 days.But Aaron don't like it :(.Don't you worry I ain't gona post this today but I am here with a simple fried rice.






Ingredients you need;
Basmati  rice-cooked,2cups
Vegetables-peppers,carrots,shallots(8 to 10)cut into tiny pieces,green peasetc
Ginger garlic-minced,1-2 tbsp
green chillies-2 slit lengthwise
Egg-2(optional),beaten,salted,peppered
Soya sauce-2tbsp
Vinegar-1tsp
garam masala-1/2tsp(optional)
Crushed pepper-1 to 2tsp
Oil-2tbsp
Coriander leaves or spring onions-finely chopped
Salt as per taste
*If you choose to add prawns,chicken or beef,you can add it ;make sure to cook it well and shred the meat.



Heat oil in a kadai,add the ginger and garlic.When half cooked,add the onions and chillies,salt and pepper.After a minute add the remaining vegetables.cook on a medium flame for few mins(Do not overcook).Make some space in the pan and add the egg mix.Allow it to scramble.Now mix it well.If adding any meat,you may do it now.Slowly mix in the rice.Add the soya sauce,vinegar and garam masala.Mix well.


Garnish with coriander leaves or spring onions!!!!!!!!!

Quick Fried Rice

Fried rice is always quick and you can make it veg or non vegAgain having loads of option of what to add into it.
Having skipped breakfast we had to have an early lunch or shd I say brunch and this recipe was the perfect answer.







Ingredients:


Cooked basmati rice-2cups
Eggs-2 scrambled
Onion-1 medium,finely chopped
Ginger-garlic-minced-2tbsp
Beans-5 finely chopped
carrots-1/2 finely chopped
Beef-cooked and shredded;1/2 cup
Soy sauce-3tbsp
Hoisin sauce-1tbsp (optional)
Pepper powder-1tsp
Salt as per taste
Oil-1tbsp.

Heat a deep non stick pan.Add  the oil.When its hot add in the ginger and garlicSaute it and then add the onions and let it cook.Meanwhile mix beans and carrot with a pinch of salt and micowave it covered for 2 mins.Add the sauces to the pan followed by the rice,beans,carrot,beef and scrambled eggs.Sprinkle pepper and salt as per your taste.


Serve hot!!!!!!!!
I used the beef from leftover beef fry.You may use chicken,prawns or eggs.

Dill Paratha and Spring parcels

Today I made  2 new recipes and loved it.The first is dill paratha.Dill is called Shevid in Hindi or Shepu in Maharashtra.The next one is spring parcel.Its just a mega form of spring rolls ;hence the name.
hope you love it.






Ingredients;
Dill leaves-12 cup,mcrowave it for 3 to 4 mins with 3 tbsp water
Wheat flour-11/2cup
Gram flour-1/2cup
Ajwain seeds-1tsp
Turmeric powder-1tsp
Green chillies-2 minced
oil-3 tbsp
Salt as per taste
Ghee/Butter
Water-1cup or more.






Mix the wheat and gram flour,ajwain seeds,turmeric,salt and green chillies.Now add the cooked dill leaves.Now add the water slowly and start mixing it into a dough.when done add oil and knead to form a soft dough.Leave it aside for 30 mins.
After 30 mins.make small balls of it and make chappatis of it.Apply ghee or butter.
Serve hot with raitas.



Strangely I love any parathas with condensed milk!!!!!!!!!!
And also u may add more ghee or butter;I am a bit stingy with lipids thats why it looks a bit dry.
Spring rolls   oopss I mean the spring parcels.


Ingredients;
phyllo sheets-as required
Noodles- cooked 1/2 cup
Ginger garlic-minced-2tbsp
shallots-4 to 5,finely sliced
egg-1,scrambled
soya sauce-1tsp
tomato sauce-1tsp
pepper powder-1/2tsp
eggwhite-1egg
oil-1tbsp and for deep frying
salt as required.

heat oil in a pan.add the ginger, garlic and shallots.Now add the sauces,pepper powder and salt if required.(soya sauce has salt).Now add the soya and the tomato sauce.Mix it ,then throw in the noodles and egg.Mix it till its dry.Keep it aside to cool.Now take the phyllo sheets ,put some of the mixture at the centre and make a parcel of it.Apply egg white at the edges to avoid the sides opening in oil.deep fry each parcels.Phyllo sheets fry quickly.
Serve with ketchup or JLT!!!!!!!!!!!!!

Chicken Lollipops

I made these lollipops with chicken wings. You need to cut a wing at the joint into piece and then pull the meat to one end of the bone.We can make 2 lollipops from one wing.





Ingredients:

Chicken wings -5 to make 10 lollipops
Minced ginger and garlic-2-3 tbsps
Jalapeno peppers -1 cut lengthwise into strips
Egg-1
Chilli powder-a pinch
Crushed pepper-half tsp
Salt-2 pinch
Corn flour-2tbsp
Soy sauce-1tsp+2 tbsp
Chilli garlic sauce-1tsp+2tbsp
Oil for frying

Marinate the chicken lollipops with 1tsp chilli garlic and soya sauce, pepper and salt.Keep aside for 20 mins.Beat the egg put in a pinch of chilli powder and salt.Heat oil for frying.Dip the lollipops in the egg mixture and fry it till they are cooked and brown(approx 5mins).Keep it aside.In a separate pan add a tbsp of oil ,throw in the ginger garlic and chilli.saute it.add 2tbsp each of soy and chilligarlic sauce .when the sauce thickens.add the lollipops.Coat the lollipops well.Mix a tsp of corn flour in 1tsp of water and add to the chicken.heat it till the mixture coat the the lollipops well. serve with aluminium foil wrapped on the bone as shown in the picture.

Chilli Chicken

Another chicken recipe in a row; a request from J&J 2 of my frens.Its a very popular indochinese recipe.





Ingredients;

Boneless chicken-750 gms,cubed
Onion-2 small, cubed
Capsicum-cubed-1cup
Babycorn-4 slit lengthwise (optional)
Ginger-2tbsp minced
Garlic minced-1tsp
Ginger garlic paste-1tsp
egg-1
soya sauce-2 to 3 tbsp
chilli garlic sauce-3tbsp
tomato sauce-2tbsp
corn flour-2tbsp
crushed pepper-1+2tsp
salt as per taste
oil for deep frying
red food colour-optional
coriander leaves or spring onions for garnish

Mix the corn flour, egg, gingergarlic paste,1tsp pepper,1 tsp soya sauce and salt.Make it into a paste and coat the chicken pieces.Leave it for marination for 15 minutes.Now heat oil and deep fry the chicken pieces till cooked and golden brown.Remove it on to a kitchen towel to drain excess oil.
In a pan heat 2 tbsp of oil.Add the ginger and garlic stir it for a minute then add the onions and cook it for a minute or 2.Do not overcook the onions.now add the capsicum and baby corn.aad the salt and remaining pepper powder.Saute it; then add the soya, chilli-garlic and tomato sauces.You may want to add the food colour at this stage.Add 100 mls of water and let it heat.When it starts boiling add the chicken pieces.Mix 2 tsp of corn flour in little water(10 to 20 mls) Add this to the gravy and stir it well.The gravy will start thickening.Switch of the flame when the gravy is of desired consistency and coating the chicken and veggies.Garnish with coriander leaves or spring onions.

Serve with fried rice!!!!!!!!!!!!!!

Chicken manchurian

Manchurians can be made from vegetables, paneer, chicken,beef etc.I have made chicken manchurian.


Ingredients:
Shredded chicken pieces-250 gms
Onion, capsicum, carrots-cut into cubes-1 1/2 cup
baby corn-3 to 4
beans-5 to 6 cut into strips.
ginger-garlic-1tbsp minced
egg-1
crushed pepper-1+1/2tsp
soy sauce-3-4 tbsp
corn flour-2 tbsp
salt as per taste
H20-1/2cup
spring onions to garnish.

Beat the egg.Add 1tbsp of corn flour, salt and half tsp of pepper.Coat the chicken strips.Heat oil in a pan .Deep fry the chicken until cooked.Remove the chicken pieces onto a kitchen towel to drain excess oil.Heat a wok.Add 2 tbsp of oil and add the minced ginger-garlic then throw in  the vegetables and a pinch of salt and pepper.Stir fry it ..add the chicken pieces.Mix in the soy and tomato sauce.Add water.Cook for 2 minutes.Mix 1tsp of cornflour with 2-3 tbsp of water.pour it into the dish. Remove from flame when the sauce thickens.Sprinkle spring onions.
Serve with fried rice.

Chicken wings

Chicken wings can be prepared in x no. of ways.This is a very simple and quick recipe.the recipe was shared by one of my philipino friend..






Ingredients;

Chicken wings-6 to 8
crushed pepper-11/2tsp
minced garlic-2tsp
egg-1
salt to taste
plain flour-50 gms
oil to deep fry

Rub the salt, pepper and garlic into the chicken wings.Dip it into the beaten egg and coat it with the flour.
Deep fry it till cooked and golden brown in colour.
Serve it with ketchup or lime wedges.

Paneer Manchurian

Paneer or haloumi is indian cheese.Paneer can be cooked in different ways.This is paneer with a chinese twist.




Ingredients:
Paneer -100gms cut into cubes
onions,capsicum-cut into cubes
cornflour-2tsps
sugar-1 pinch optional
minced ginger garlic-1tbsp
soya sauce-2 tbsp
crushed pepper-1/2 tsp
oil to deep fry
H2o 50 mls
springonions or coriander -optional


Coat paneer with 1 tbsp cornflour,1/2 tsp soya sauce, crushed pepper salt if needed.
Deep fry the paneer until its brown.
In a separate pan .Add 2 tsp oil.Stirfry ginger and garlic.Then add the vegetables.Add salt to taste and sugar.Add the soy sauce.If sauce is thick Add  5tbsp h2o.Mix 1 tsp cornflour in 2tsp h2o. add this to the vegetables.Add the paneer.Let the water evaporate and let the sauce coat the paneer.Using a nonstick pan is advisable.Garnish with spring onions or coriander..!!!!!!!!!!!!!
