I was travelling from TVM to Mumbai by Jet and I got this lovely sweet chole with chappati for lunch.Ofcourse there was chicken biriyani and chocolate mousse as well.But the chole or the way it was made was very new to me and interesting as well.So finally after a month I made this and fell in love with it again.
Chole/white chickpea-soaked in salt water for 3 to 4 hrs
Tamarind jaggery sauce-1cup
Onion-1 finely choppes
Raw mango-1 small,finely chopped
Sev/masala moong- 5 to 6 tbsp
Coriander leaves- 2sprigs,minced
For the sauce;
Tamarind-2 lemon sizes
Jaggery -100 gms
Pressure cook the chole with 11/2 cupofwater,salt and whole cumin seeds until3 whistles.Let the cooker stay on till it cool down.Meanwhile mix tamarind with 1cup water to this add the jaggery, chilli and cumin powder and salt and boil it ,until sauce thickens well.
Now transfer chole to a deep pan.Strain the sauce and add this into it.Let it cook in the sauce until there is no water left.Switch off the stove and befor serving add the lemon juice,onion,mango,sev,masala moong and coriander.
Best served cold as a chat or with rotis or pooris!!!!!!!!!!!!!
