Baked Seabass with Roasted Vegetables






Ingredients

For the fish;
Seabass-1,cleaned and gutted
Chilli powder-1tbsp
Pepper powder-1tsp
Turmeric-1tsp
Salt-1tsp
Ginger garlic paste-1tbsp
Curry leaves-5 
Olive oil-2tbsp

For the vegetable roast:
Potatoes-4peeled and cubed
Carrots-2peeled and cut into chunks
Onion-1medium,cut lengthwise
Salt-as per taste
Butter-2tbsp
Garlic-3 crushed
Crushed pepper-1/2tsp.
Limejuice-1tbsp



Grind the ingredients for marination.Make deep long gashes on the fish and apply the marinade.Leave it for 30 mins.Meanwhile.Boil water and add the potatoes with 1 tsp salt.Let it cook for 5 mins.Strain it.Add the onions and carrots.Sprinkle pepper powder,salt ,butter and garlic.Let the vegetables coat the mix.
On a roasting tray.Lay the vegetables and place the fish on top.Add a drizzle of olive oil.Cook for 30 mins.Turn the fish and bakeit for 5 to 8 mins more.Sprinkle some lime juice before serving.


Serve with pitta bread,roti, rice or JLT!!!!!!!!
