Idiyappam with egg stew

String hoppers is a culinary specialty in Kerala and Tamilnadu. It is also popular in certain areas of Sri Lanka. It is also called noolappam or noolputtu from the Tamil word for string, nool, but is most commonly known as idiyappam or string hoppers. It is made of rice flour or wheat flour, salt and water. It is generally served as the main course at breakfast or dinner together with a curry (potato, egg, fish or meat curry) and coconut chutney. It is also served with sweetened coconut milk in Malabar region of Kerala. It is not usually served at lunch. Using wheat flour in preparation gives it a brownish hue.


Ingredients;
Rice flour-2cups
water-2cups
salt-1tsp
Grated coconut-1/2 cup
cumin powder-1tsp(optional)
Boil the water.Mix rice flour,cumin powder and salt.Add this to the boiling water.Mix well.The powder will become a starchy and lumpy dough.Now put the steamer with water on flame.




Using a noodle maker Press this dough through it to form string hopper into trays that can go into the steamer.Sprinkle grated coconut on top.Steam it for 10 mins,
Your Idiyappam is ready!!!

Stews are the best combination with Idiyappams.I made egg and potato stew but you may substitue it with chicken,beef or  vegetables.


Ingredients;
Eggs-3 boiled
Potatoes-2,cubed and cooked
Onion-1large,finely sliced lengthwise
ginger-1/2 inch,finely chopped
garlic-2 to 3 cloves,finely chopped
green chillies-2 slit lengthwise
curry leaves-1sprig
coriander powder-1tsp
garam masala-1tsp
coconut milt-1/2 cup
oil-1tbsp
mustard seeds-1tsp
pepper powder-1/2 tsp
salt as per taste.
water-1/2 cup
Heat oil in a pan,splutter the mustard seeds.Add onion,ginger,garlic,green chillies and curry leaves.saute it till onions are tranlucent.Add the coriander and garam masala powder.Give a stir.Now add the potatoes.pour the water and cook for 3 to 4 minutes.Cut the eggs into half.add this and then add the coconut milk.Switch off the flame and Sprinkle pepper powder on top.

Serve hot !!!!!!

we make curry and idiyappam the same way never put coconut on top although we a have coconut sambal that we serve
