Dum Aaloo

Ingredients;
Baby Potatoes-Boiled,skin peeled
Onion-1,large,sliced lengthwise
Ginger-1inch
Garlic-3pods
Yogurt-1cup
Chilli powder-1tsp
Coriander powder-1tsp
Whole cumin seeds-1tsp
Whole spices-1bay leaf,2 cardamoms,3cloves,1inch cinnamom
Coriander leaves-finely chopped
Green chillies-3 to 4 slit lengthwise
Oil-3tbsp
Water-1cup
Salt as per taste

In a heavy bottom pan add oil and brown the cooked potatoes.When its golden coloured.Take it out and fry the onion until brown in colour.Crush the ginger and garlic together and add this to the onion.Saute it for a minute and then add the potatoes,whole spices,cumin,chilli,coriander powder and salt.Add half a cup of water and allow it to cook.When the oil separates,pour in the yogurt and cook it on a high flame.Allow oil to separate before adding half cup of water.Adjust the consistency as desired.Garnish with coriander leaves and green chillies.
Serve with rice or rotis!!!!!!!!!
