Palak and Kothimbir vadi (Spinach and Coriander leaves Vadi)

This is a Maharashtrian speciality.Normally we use spinach or coriander leaves for this.I have used both and it tasted good.Appu thanks for the share.

Ingredients:
Spinach leaves-1cup,finely chopped
Coriander leaves-1/2cup,finely chopped
gram flour(besan)-1/2 to 3/4cup
chilli powder-1tsp
garam masala-2tsp
turmeric-1/2tsp
sesame seeds-1tsp
walnuts-2tbsp chopped,optional
salt as per taste.
mustard seeds-1tsp
cuminseeds-1tsp
dessicated/grated coconut-2tbsp
oil-2 to3tbsp
Mix the spinach and coriander leaves,gram flour,powdered spices,sesame seeds,walnuts and salt.Make it into a loose dough.Steam this in a steamer for 15 mins.

Take it out and let it cool down.Cut it into cubes or desired shapes.
Heat oil in a pan.Add 2 tbsp oil.Fry the vadis on all sides(30sec each sides approx).Remove it.Now add the mustard seeds in the same oil.When it splutters,add cumin seeds and coconut.When the coconut is brown.Add the vadis and let it coat in the mix.

Serve as a side dish or as a snack!!!!
