Summer is here and me posting a soup recipe surely does not mean that I miss the cold winter.But the soup is something you can have in any weather.So here goes a recipe for a simple filling mushroom soup.
Onion-1 med,thinly sliced
Garlic-1 to 2 cloves,minced
Butter or oil-1tbsp
Cooked fusilli- 1/2 cup(optional)
Pepper powder-1 tsp
Salt as per taste
Water-11/2 cup or more
Parsley leaves for garnishing(optional)
Heat the butter in a pan,add the garlic and onion;saute it for few seconds.Now add the mushrooms.Cook it till the water that ooze out disappears.Now add the salt and pepper then blend it.Take a pan and add 1/2tsp butter.Add few slices of onions saute it. Add the pasta and milk.When it heats pour in the blended soup and water as per required consistency and heat it.Garnish with chopped parsley leaves and pepper powder.
Serve hot with toasted brown bread!!!!!!!!!!
