Salmon Biriyani with Brinjal Raita

Ingredients
For Salmon Biriyani;
Salmon-1/2kg,boneless,cubed
Basmati rice-2cups or 300 gms
Onion-1,medium,
Tomatoes-5,finely chopped
Green chillies-5
Ginger-1inch
Garlic-4pods
Coriander leaves-3 sprigs
Chilli powder-1/2tsp
Garam masala-1/2tsp
Turmeric-1/4tsp
Pepper powder-1/4tsp
Fennel powder-1/2tsp
Coconut milk-1/2cup
Whole spices-Cardamom-4,cloves-4,cinnamon-1inchx2,bay leaves-2
Nuts and raisins,onion slices for garnishing
Ghee-2tbsp
Oil -2 to 3 tbsp
Water- 4 to 5 cups,for the rice
Salt as per taste

Boil the water in a sauce pan with half of the whole spices and 1 tsp salt.When it begins to boil add the rice.Drain when the rice is cooked.
Mince the ginger,garlic,green chillies,onion and coriander leaves together.Heat oil in a pan and add the remaining of wholespices followed by the ginger garlic mince.Saute it until the raw smell is gone and then add the spices and cook for a minute.Now add the tomatoes and cook it on a medium flame.When the tomatoes are cooked and the oil seperates add in the fish pieces and the coconut milk.Let it cook on a high flame.Meanwhile heat the ghee in a pan and deep fry the onions,nuts and raisins.Keep it aside.When the fish is cooked and the gravy is thick.Add the rice on top.Make holes on top of the rice and pour the ghee and spread the fried onion and nuts.Cover with foil and cook in a preheated oven at 230 deg cel or max for 15mins.
Mix fish with rice taking care that the fish do not flake.Serve!!!!!!


For the Baingan raita;
Brinjal-1,large,cut into small cubes
Chilli powder-1/2tsp
Cumin powder-1/2tsp
Pepper-1/4tsp
Oil-2tbsp
Salt as per taste
Thick cool Yogurt-2cups.
Coat the brinjal well with the spices.Heat the oil and allow the brinjal to cook in it on a low to medium flame.Do not add water.When done mash it slightly.Take the yogurt in a bowl and add the brinjal on top.Do not mix until it reach the table.
