Brinjal cooked in coconut & groundnut gravy




Ingredients;
Brinjals-5,medium sized,diced or cubed,kept immersed in salt water for 15mins
Coconut-1/2cup,grated
Groundnuts-5 tbsp
Garam masala-1tsp
Chilli powder-1tsp
Turmeric-1/2tsp
Mustard seeds-1tsp
Onion-1,medium,finely chopped
Green chillies-1,chopped
Curry leaves-1sprig
Asafoetida-1/2tsp
Oil-2tbsp
Tamarind pulp of 1 lemon sized tamarind
Water 100 mls
Salt as per taste



Dry roast the coconut and groundnuts until the coconut is brown.Add the chilli and garam masala powder.Dry grind it.Add the tamarind pulp with 50 mls of water and blend it again to make a gravy.Heat the kadai,splutter mustard seeds.Add the onion,green chillies and curry leaves.When the onions are half cooked add in the brinjal.Throw in some salt.Let it cook for a minute.Pour the gravy.Add the remaining water .Mix and allow it to cook for 5 minutes on moderate flame.Add more water if you need gravy.



Best served with rotis!!!!!!!!
