Scrambled Egg Biriyani

Biriyani with scrambled egg-making this for the first time but I was happy with the result.It was a bit spicy so I tried to cut down on the chillies in my ingredient list.



Ingredients;
Basmati rice-2 cups
Eggs-4 to 5
Onion-2 medium,finely chopped,keep aside a handful for the eggs
Ginger-1inch
Garlic-4 cloves
Green chillies-4 to 5
Tomato-1,minced
Coriander leaves-2 sprigs,finely chopped
Red chilli powder-11/2tsp
Garam masala-2tsp
Cumin powder-1tsp
Turmeric-1/2tsp
Salt
Whole spices-2 cardamom,2 cloves,cinnaon-1inch
Oil
Water-31/2cups
Onion rings and coriander leaves for garnish.






Grind the ginger,garlic and greenchillies together with a pinch of salt.Heat 2tbsp oil in a cooker.Add the whole spices and roast it followed by ginger garlic and chilli mince.When the raw smell is gone;add the onions and saute it till onions are translucent.Now add the masala powders and roast it on low flame.Stir in the tomato and coriander leaves.Pour in 31/2 glasses of water.When the water boils add the rice and pressure cook for 2 whistles.Leave it to cool for 5 mins and then open the cooker.Beat the eggs,add some chopped onions,a pinch of garam masala and salt.Scramble this mix and keep it aside.
Mix the rice and the scrambled eggs and let it steam for 2 to 3 mins.
Garnish with onion rings and coriander leaves.

Serve hot with cool raita!!!!!!!!!!!!!!
