Beef Dum Biriyani

I love making biriyanis and eating it too.But there is an incompleteness if u haven't made a Dum Biriyani.ForDum Biriyani  you cook the meat with the rice.I think I was very brave to try it with beef.Initially I thought I will try it with chicken cos its safe as chicken cooks easily.But I love to take risks and this time it was well paid off.The beef was so soft that it cud be separated from the bone so easily.






Beef-1kg,boneless or on the bone
Basmati rice-2 cups,soaked in water
Pepper powder-2tsp
Turmeric-1/2 tsp
Ginger-garlic paste-1tbsp


Marinate;
Whole spices-3 to 4 cloves,cardamoms,cinnamon 1 inch,bay leaves,1tsp pepper
Chilli powder-1tbsp
Turmeric-1tsp
Cumin powder-2tsp
Black cumin seeds-1tsp
Cumin seeds-1tsp
Green chilli-3 roughly chopped
Coriander leaves-2 sprig
Mint leaves- 10
Ginger garlic paste-2tsp
Fried onions-11/2 cup
Curd-1 cup
Salt as per taste
Refined oil/ghee-2tbsp


Garnish
Coriander leaves,mint leaves a handful and 2 green chillies-minced together
Fried onions
Nuts and raisins-3tbsp
Black cumin seeds-2tsp
Saffron boiled with milk-1/2 cup(optional)






Coat the beef with turmeric,salt , pepper 2tbsp water and let it cook for 10 mins.(I would skip this step if I am using chicken or tender lamb or mutton.).Let the water that ooze out be evaporated.
Now after it cool down,add the ingredients for marination and leave it for 30 to 45 mins.
Meanwhile cook the  rice till its 70% done.For Dum biriyani You need 40%,60% and 80% cooked rice.But I did not follow that cos I am making a small quantity.Strain the rice.Take a deep oven friendly pan.Layer the meat at the base.Add half of the rice and sprinkle the herbs,nuts,black cumin and saffron milk.Add the second half and garnish with fried onions,herbs,nuts and saffron milk.Put a tight lid on.I used aluminium foil.
Leave in a preheated oven for 60 mins at 250 deg cel.
If you are using stove then use a heavy bottom pan or use a frying pan for the base.
Wallah!!!!!!Your Beef Dum Biriyani is ready....




Serve hot with raitas,poppadums or pickles.!!!!!!!!!
