Gushtaba is a Kashmiri speciality;its spicy meatballs cooked in yogurt sauce.The meat used for this is of lamb with additional fat added and it takes few hours to make Gushtaba the traditional way.You may substitute lamb with beef or chicken.
Ingredients;
For the koftas;
Minced meat-500 gms
Green chillies-5,minced
Ginger-1/2inchminced
Pepper powder-1tsp
Chilli powder-2tsp
Cinnamon powder-1/4tsp
Fennel seeds-1/2tsp crushed
Turmeric-1tsp
Cumin powder-1tsp
Salt-2tsp
For the gravy:
Onion-1 finely chopped
Garlic-1 clove
Yogurt-1/2cup
Chilli powder-1tsp
Turmeric powder-1/4tsp
Cinnamon powder-1/4tsp
Cardamom powder-1/2tsp
Kasuri methi -1tsp
Cumin powder-1tsp
Dry mint leaves-5 to 6 leaves
coriander leaves(optional cos i had used it but not in the original recipe)
Oil
Salt as per taste
Mix the ingredients for the kofta and make small balls of it.Either you can deep fry it for 12 to 15 mins or grill it in a preheated oven at 180 deg cel for half an hour.
Now add 2 tbsp oil in a pan.Add the onion and garlic.Let it brown.Now add the chilli,turmeric,cumin,cinnamon and cardamom powder,kasuri methi and salt.Roast it for a minute,then grind it with some water to form a paste.Heat a pan.Add the masala with the yohurt and 1 cup water.Let the mix boil and then add the koftas to it.Let the gravy reduce till it becomes thick.Mix in the dry mint leaves.Garnish with coriander leaves.
PS;Gushtaba sauce traditionally is watery and I have added some spices like chilli powder,turmeric.Also you may add whole spices instead of powders.
