Vattayappam

Appams are Keralite speciality.Its made from fermented rice batter.Today I made vattayappam and my husband and my son loved it.




Ingredients;
Long grain rice-1cup
grated coconut-1cup
cumin seeds-2tsp
yeast-1tsp
cardamom powder-1tsp
jaggery or sugar as per taste
raisins

Soak the rice for 5 to 6 hours.Then grind it into fine paste with water.Take 3 tbsp of this batter and cook it in a separate pan on high flame the batter with clump into a thick starchy substance,add this to the rice paste and grind it again.This makes the appam soft(Mum's tip).Remember the batter needs to be a little bit thicker than pancake batter.Dissolve the yeast and 1tsp sugar in half cup of hot water.Grind the coconut cumin seed into paste.Mix the coconut paste, and yeast with the ground rice and leave to ferment in a warm place for 6 to 12 hours.When the batter ferments it tastes sour .Add the sugar or jaggery as per your taste.I added around 100 gms of jaggery and the cardamom powder.Mix this together.Sprinkle some raisins and steam it for 20 minutes or till done.
