Ingredients
Pumpkin/substitute with butternut squash-250 gms
coconut-1/2 cup
green chillies-1 to 2
turmeric-1tsp
cumin seeds-1tsp
mustard seeds-1 tsp
dry red chilli-2
curry leaves-1sprig
shallots-2 chopped
salt as per taste.
water-1 to 11/2cup
Peel the skin of pumpkin and remove the seeds.Cut it , add turmeric,salt and water and cook it.
Grind together the coconut,green chillies and cumin seeds.Make a fine paste.Mash the pumpkin but do not puree it.Pour the coconut paste and heat the mixture.Stir it,avoid boiling.Now heat oil in a pan add mustard seeds,when it splutters add shallots,red chilli and curry leaves.Saute it and then pour it into the pumpkin curry.Enjoy with steaming hot rice!!!!!!
