Vegetable Biryani

Ingredients;
Basmati rice-11/2cup
Mixed vegetables-3 cups(peas,cauliflower,carrots,potato,capsicum)
Onion-1,medium,finely chopped
Tomato-1,finely chopped
Green chilli-1,slit lenthwise
Ginger garlic paste-1tbsp
Cumin seeds-1/2tsp
Cardamom-3pods
Turmeric powder-1/4tsp
Yogurt-1/2cup
Oil-2 to 3 tbsp
Mint leaves-2 tbsp,chopped
Coriander leaves-2tbsp chopped
Salt as per taste
Water



Add rice to boiling water with half tsp salt.When its cooked strain it.Now in a heavy bottom pan.Add oil when its hot,add the cardamom seeds.After few seconds add the cumin seeds.When this turns golden add in the ginger garlic paste,followed by the onion and chilli.Saute it until the onion is cooked well.Now add in the tomato and cook it till it mashes.Add in the vegetables except capsicum.Allow the vegetables to cook on a medium flame.When the vegetables are cooked.Add the capsicum.Pour in the yogurt.Sprinkle turmeric powder and let it cook further until the yogurt is absorbed by the vegetables.Add rice on top Sprinkle the herbs in between the layers of rice and on top and close the lid.Allow the vegetables and rice to steam for 2 to 3 minutes.Switch off the flame and leave the lid closed for 5 mins.Mix well and serve hot with cold raita.

Yeah, looks so yummy and halthy! I wonder if it's okay to add more turmeric powder? I just love that. :)
