Cinnamon-2inch sticks x5
Cloves-10 to 15
Bay leaves-6 to 8 leaves
Black cardamom seeds-6,seeds only
Staranise-4 to 5
Shahijeera/Black cumin seeds-2tsp
Heat the first set in a pan for a few mins.Switch off the flame when the aroma from the cinnamon reach the nose.Cool it. Add this and the ingredients in set 2 to a ginder.Powder it.Store in an airtight container.
To alter the taste of the masala you can alter the ratios of the ingredients each time.
You may make the masala without the fennel,shahi jeera and staranise.
