Fruit and Nut Cake




Ingredients;
Self raising flour-11/2cup
Butter-150gms
Sugar-1cup,powdered
Sugar-4 tbsp for caramalising
Eggs-3
Cloves-4 Cinnamon-1inch Cardamom-3pods Nutmeg-1/4tsp Dried ginger-1/2tsp-powdered
Raisins,Cherries,Nuts,Dates-chopped and soaked in brandy/rum/wine-1/2cup
Water-2tbsp
Vanilla essence-2tsp



Add 4 tbsp sugar in a sauce pan;allow it to melt and brown on a low flame.Add 2 tbsp of water and pour out the syrup.Melt the butter in a sauce pan.add sugar to it and allow it to melt.When it liquify remove from heat and allow it to cool.Beat with a hand blender or mixer.Now add one egg at a time.Beat it until frothy.Stir in the caramel syrup,essence and the powdered spices and mix well.Slowly add the flour and blend it without lumps.Finally fold in the soaked fruits and nuts.Pour in a greased pan and bake in a preheated oven at 180 deg cel for 35 to 40 mins.
