Mummy's Egg Curry




Ingredients;
Eggs-4,boiled
Potatoes-1,medium sized,cubed
Onion-1,sliced lengthwise
Ginger-1/2inch,minced
Garlic-2cloves,minced
Green chillies-1
Curry leaves-1sprig
Oil-2tbsp
Mustard seeds-1/2 tsp
Shallots-2 to 3 sliced
Salt as per taste
Coconut paste;
Grated coconut-1cup
Coriander powder-1tsp
Fennel seeds-2tsp




Heat oil in a pan,saute the onions,garlic,ginger,green chillies and curry leaves.Saute it well.Now add the coconut paste,potatoes and the eggs.Let it cook together for 5 mins.In a separate pan splutter mustards,add the shallots.Allow it to brown and pour it over the curry.Switch off the flame and serve with appams!!!!!!
