Ingredients;
Self raising flour-11/2cup
Butter-1cup
Brown/White sugar-1cup,powdered
White sugar-25gms
Vanilla essence-1tsp
Rum essence-1tsp
Mixed dry fruits and nuts-1/2 cup,coat with 1tbsp of flour
Cloves-4,cinnamon-1inch,cardamom-4
Eggs-2
Water-2tbsp
Salt-1pinch
Powder the spices together.Heat a pan.Add 25gms sugar and let it brown slowly.When it turns brown add the water and stir it well.Pour this thick syrup in a bowl.Now beat the sugar,salt and butter together.Slowly beat in the eggs one by one.Now add the spices, caramel syrup and the essences one by one and mix well.Add the flour a handful at a time and let it blend together.Lastly add in the dry fruits and fold it into the cake mix.
Bake it at 170-180 deg cel for 60mins or until the fork comes out clean.
*Coating the dry fruits with flour prevents it from sinking to the bottom of the cake.
*Traditionally you soak the dry fruits in rum/brandy for a week.In that case add 2tbsp of brandy instead of the essence.
