This is a sweet Mughlai dish made from rice.It can be served as a dessert or snack.
Basmati rice-1cup,soaked for 20 to 30 mins in cold water
Yellow food colour-(optional)
Raisins,cashew nuts,walnuts,coconut chips-3 to 4 tbsp
Boil the water with cardamom and the colour if you opt to.Add the rice to this and cook till rice is 3/4th done.Strain the rice.Boil the milk with saffron.Now in a pan ,add ghee.Add the whole spices then the nuts,raisins and coconut chips.When the cashews are lightly brown add rice.Stir it gently for a minute.Pour the milk and add the sugar ;cover the lid.Leave it to cook for 3 to 4 mins on low flame.The milk will be absorbed by the rice and will be cooked perfect.
Serve hot or cold!!!!!!!!!!
*You may even opt to add khoya -if so add it at the end and let it cook for 2 mins more on low flame.
*Red cherries and pineapples can be added to the pulao.
