Ethakya and Linseed Cake

Ethakya appam is very common in our houses but a cake with it will be unusual I thought when I saw very ripe bananas in the kitchen.Believe me it came out better than the the usual banana cake and awesome colour.I also added coarsely milled linseed which is not only healthy but also adds a nutty effect.


Ingredients;
Ethakya/Kerala bananas-3,very ripe ones,Mashed with a fork
Linseed-coarsely ground-1/2 cup
Self raising flour-1cup
Sugar-1/2 cup,powdered
Butter-1/2 cup
Eggs-2
Cinnamom powder-1/2 tsp
Vanilla essence-1tsp
Salt-1pinch
Raisins-2tbsp (optional)



Mix together the sugar and the butter.Now add in the eggs and beat it well.Add in the flour,linseed powder,mashed bananas,cinnamon,vanilla and salt.Mix well then add the raisins.Grease a tray.Pour the cake mix.Bake in a preheated oven at 180 deg cel for 30 mins or until the skewer comes out clean.


You will surely be amazed!!!!!!!!!

Lovely idea! You know what, this's the first time I've come across a cake recipe with our humble ethakaya..:) I've never cooked with linseed too. All in all, I'm intrigued by the flavors.
