Appams

Appams are keralite speciality mainly on the breakfast menu.





Ingredients;
Long grain rice-2 cups
grated coconut-11/2 cup
cumin seeds-1tbsp
shallots-5
yeast-1tbsp
sugar-2 tbsp
salt as per taste.
coconut or refined oil-1tbsp
water

Soak the rice for 5 to 6 hours.Grind it into a fine paste.Take 5tbsp of this batter and cook it till it become a lump of starch.Now grind this and add it to the batter.Mix yeast and sugar with half a cup of water and let it dissolve.Grind together the coconut ,cumin seeds and shallots.Mix the yeast mix and ground coconut with rice batter.Leave for fermentation in a warm place.When the batter ferments it will be sour in taste.
For vellayappams apply oil on to a nonstick pan.Pour the batter and cook like pancakes on both sides.
To make palappams you need a appachatti.


Serve with curry or masala roasts!!!!!!!!!!!!
