Only the knife knows what goes on in the heart of a pumpkin.
Simone Schwarz-Bart
This is adapted from Preeoccupied though I have made some changes to it.
Ingredients;*
Pumpkin-250 gms
Potato-2
Green chillies-2
Red chillies-2
Turmeric-1tsp
Chilli powder-1tsp
Mustard seeds-1tsp
Salt as per taste
Oil-2tbsp
Water-1/2 cup
Peel and cut the pumpkin and potato into thin long slices.
Now add oil to a kadhai or pan.Splutter mustard seeds.Add the slit green and red chillies. Then add the finely sliced pumpkin and potatoes.Sprinkle the turmeric, chilli powder and salt, give a stir and pour in the water.Close the lid and let it cook for 5 mins. Now leave the lid open for the water to evaporate.
Best served with puri though I served with rice and pickle!!!!!!!!!
* The original recipe did not add any powdered spices and added a tsp of sugar.
