Dum Aaloo

Dum Aaloo is a Kashmiri cuisine. The dish is made by cooking potatoes in curd on a slow flame.
In my recipe.I have used cream instead of curd.

Ingredients;
Baby potatoes-6 to 8
Onion-1
Tomatoes-2 med,pureed
Ginger garlic paste-1tbsp
Chilli powder-2tsp
Turmeric-1tsp
Garam masala powder-1tbsp
Cumin powder-1tsp
Cream-3 to 4tbsp
salt as per taste
oil for deep frying
Cilantro for garnishing

I have used baby potatoes. If you are using large potatoes cut it into 4 .Boil the potatoes till 3/4th cooked. Now peel it and apply 1tsp chilli powder, turmeric and salt.

Deep fry the potatoes till cooked and golden brown in colour.remove it on a kitchen towel. When it cool down, prick it with a skewer so that when added into the gravy it can seep into the potatoes.

Now heat 2tbsp oil in a pan.Saute the onions. When onions are translucent, add in the gingergarlic paste.Roast it till the raw smell is gone. Now add the chilli powder, garam masala, cumin powder and salt.Pour in the tomato puree.Cook it till the oil separates. Now add 1/2 a cup of water(If you want to add curd you may do it now and adjust the amount of water accordingly). When the gravy boils add in the fried potatoes and cook for 4 to 5 mins.Switch off the flame, pour the cream and garnish with coriander leaves.

Serve with chappati or rice!!!!!!!
