Raita

This recipe was requested by one of my friend.




Raita is based on yogurt and used as a dip or sauce. The yogurt is seasoned with coriander,cumin ,mint and other herbs.It is a cooling and a good accompaniment with rich and spicy food such as biriyanis or kebabs.



Cucumber raita


Cucumber-1grated
yogurt-2 cups
green chilli-minced(optional)
salt
coriander or mint and cumin powder

Mix the ingredients together.Garnish with either coriander leaves or mint and cumin.Serve cold


Carrot  or tomato raita





carrots or tomato-2 grated
yogurt 2 cups
salt as per taste
coriander to garnish
Mix it all and serve cold


Beetroot raita


Cooked beetroot-2 small sliced small
Yogurt-1cup
onion-1sliced
oil-1tsp
greenchilli-1cut lentgthwise
mustard seed-1tsp
salt as per taste

Heat the oil,splutter mustard seeds.Add onion and green chilli,saute it.Add the beetroot cook for a minute on high flame.Off the flame and Mix the yogurt.

Alternatively;grate the cooked beetroot and mix it with yogurt and salt as per taste.

Cucumber onion and tomato raita
tomato-2
cucumber-1
onion-1
green chilli-1
yogurt-1cup
salt as per taste.
Coriander leaves for garnish.

Cut the tomato,onion and cucumber small,Add salt and mix it with yogurt and garnish with coriander.



Spinach raita


Spinach-100gms-boiled and mashed ;do not puree it
yogurt-1 to 11/2 cups
roasted cumin powder
salt as per taste

Mix the ingredients together and serve cold.


Watercress raita
Watercress-finely chopped 100gms
yogurt-1cup
cumin-roasted ground powder-1tsp
salt as per taste.

Mix all the ingredients together and serve cold

its unbelievable that so many varieties can be prepared with just so basic an ingredient.Not to mention that it's so healthy and a great snack for that hunger pangs....
