Salmon with Honey Glaze and Prawn couscous

 The original version of this recipe is of Chef Garath McColgan. I have made some  changes.





Ingredients;
1 packet cooked and peeled King prawns-roughly chop half of it
2sachets  or 200gms-couscous
400ml boiling water
Magetout-10 to 12 nos
Babycorn-10 halved lengthwise
5 to 6 baby carrots-slit into 4 lengthwise
4 salmon fillets
2tbsp flour
25gm extra virgin oil
25 gm butter
2tbsp soya sauce
1tbsp honey
2cloves garlic-finely chopped
1red chilli finely chopped
coriander leaves-2 sprig-finely chopped
cumin seeds-1tsp
chilli powder-1/2 tsp*
turmeric-1/2 tsp*
pepper powder-1/2 tsp*
onion 1-thinly sliced
lime juice-1tbsp
salt as per taste.

In a sauce pan add the boiling water,couscous,chopped prawns ans salt.when it boils switch off the flame and cover with a lid for 10 minutes.In a pan ,heat oil add cumin seeds,onion and green chilly and some salt,saute it .When onions are cooked,add the coriander leaves and lime juice.Mix it with the couscous.
Boil the vegetables with water and salt.
For the fish ,take flour, salt and the optional ingredients(chilli,turmeric,pepper).Coat the fish and fry it in a pan.
In a wok add the butter.Add the garlic and chilli.Saute it then add the soya sauce and honey.Now add the veggies and the remaining prawns.
Serve the fish on a bed of couscous,pour the sauce and vegetables over and sprinkle coriander leaves.
