Kothu Paratha

Kothu Parotta or Paratha is a speciality of tamilnadu.It means minced parotta.It can be a tea time snack or brunch.


Ingredients:
Paratha-3-4 in nos
Onions-1 small finely chopped
Ginger garlic minced-1 tbsp
Geen chillies-2 nos finely chopped
Tomato-1 small
red chilli powder-1tsp
turmeric powder-1 tsp
cumin seeds-1tsp
eggs-2
coriander leaves-for garnish
oil-1tbsp
salt as per taste

Mince the parathas into small pieces.I used a scissor to cut it into small pieces.Heat oil in a pan.Add the cumin seeds followed by the onions, ginger, garlic, green chillies and curry leaves.Saute it till onions are translucent.Add the powdered masalas.Roast it till the raw smell is gone then add the tomatoes.Cook till the tomatoes are done.Now add the parathas.Mix it till the mixture is soft.Add the beaten eggs and stir well till the eggs are cooked and coats the paratha mince.Garnish with coriander leaves .
 Your Kothu Paratha is ready to serve!!!!!!!!!
