Carrot rice


Basmati rice-2 cups,cooked
carrot 3 medium sized,grated
onions-1 thinly diced
green chillies-2 slit
curry leaves-1sprig
bay leaves-2
cinnamon stick-1inch
salt as per taste
pepper powder-1tsp
coriander leaves-2tsp-minced
lime juice-2tsp
groundnuts-roasted 2tbsp(optional)

Heat the  oil in a pan.add the cumin seeds,cinnamon and bay leaves.Saute it then add the onion,ginger,greenchillies and curry leaves.Saute it till onions are translucent then add the grated carrots.Saute it.Close with a lid and let it cook for 2 minutes.Now add the rice.Add the lime juice,coriander leaves,pepper,groundnuts and salt.Mix well .
Serve hot with pickle, popadum or raita!!!!!!!!!!!!!!!

Hi Binny ,
I have read your Methi Baji and Carrot Rice Recipies It is definately a very healthy and nutrious option and it sound extremely easy and less time consumming , also loved the entire idea of growing the Methi in ur own little garden .Thank you for the recipies its definately going to save most of my time
