Millet Biriyani/Pulao



Ingredients;
Pearl Millets-2cups
Chicken-1/2kg,cut into pieces
Mixed vegetables- peas (1//2cup),1potato cubed,1carrot-cut into small cubes
Onion-2,finely chopped
Ginger-1inch,crushed
Garlic-3 to 4cloves ,Crushed
Tomato-2,roughly chopped
Green chillies-5 roughly chopped
Apple cider vinegar-2 to 3 tbsps
Lemon juice-2tbsp.
Salt as per taste
Oil-2 tbsp
Nuts and raisins
Chopped mint and coriander
Boiled water-3cups
Masalas;
Whole spices-5 cardamoms,5 cloves,1inch cinnamon,peppercorns-1tbsp
Red chilli powder-1-2tsp
Turmeric-1/4tsp
Cumin powder-12tsp
Garam Masala-1/2tsp

Heat the oil in a pressure cooker. Add the whole spices and fry it for a minute until you can smell the aroma.Add the onions, ginger,garlic and the salt and saute it for a minute or until the  onions are half cooked.Add the chicken and the vinegar and cook it until the vinegar or water evaporates.Throw in the tomatoes,chillies and the powdered spices.Mix well Pour in the lemon juice,nuts,raisins millet and vegetables.You may add some chopped herbs.Pour the hot water and allow to pressure cook for 3 whistles.
Serve with cool raitas!!!!!!!!!!

The consistency of this biryani is like rissotto.
Apple cider vinegar is a healthier option.
You may choose to add ghee instead of oil and fry the nuts and rasins instead adding it directly.
For a vegan option do not add chicken.

Millet is out of the question for us. I shall try with rice for the same deliciousness.
