Chicken-1/2kg,skinned,cut into medium sized pieces
Ginger-1 inch,finely chopped
Curry leaves-3 to 4 sprigs
Whole red chillies-5
Garlic cloves-3,crushed with skin on
To make Marinade
Mix the ingredients in the marinade list.Coat the chicken pieces with this and leave it to marinate for a minimum of 30 mins.In a heavy bottom pan,pour 2tbsp oil.Splutter the mustards.Sprinkle some cumin seeds followed by coconut chips and crushed garlic,let it roast.After a minute add the onion,ginger, garlic and curry leaves.Roast it till the onions are cooked.Now pour the remaing 1tbsp oil and 1tbsp sesame oil.Add the marinated chicken pieces.Let it cook on a high flame for 2 mins.Then keep on a medium flame,coverd with a lid for 30 to 40 mins.Stir it without breaking the peces every 5 mins.Do not add water.The chicken must cook in its juices and the oil.Check salt and add if needed.
Brown sugar or refined sugar is optional.I just the love the hint of sweet in the dish.
