Thallessery Biriyani/Rice cooked with Meat and Spices





Ingredients;
Beef on bone/Mutton-1kg
Basmati Rice-500 gms,in thalessery biriyani we use the tiny biriyani rice,if available
Garam masala-3 to4 tbsp(I used Shan's Memon Mutton Biriyani Mix)
Onion-5 meium,finely chopped
Tomatoes-3,cubed
Ginger garlic paste-1tbsp
Green chillies-8 to 10,minced or crushed
Ghee or oil-to deep fry
Salt as per taste
Nuts and Raisins for garnish.
Coriander ,Mint leaves -finely chopped,a handful




Coat the Beef with the powdered masala.Leave it to marinate.Meanwhile,heat oil or ghee and add the chopped onions(Its called Bista).Deep fry it until brown.Remove the onions and fry the nuts and raisins until golden brown.
Boil water in a sauce pan with 1 tsp of salt.Add washed rice and cook until 50 to 60 percent done.
In a pan add 2 tbsp of oil and add the tomatoes.When tomatoes are half done add the ginger garlic and green chillies.Saute it till oil separates.Now add the marinated beef,3/4th bista and let it cook for 10 to 15 mins.You may add 2 to 3 tbsps water if its too dry.
Take an ovenfriendly vessel.Pour the beef with the gravy into it.Now add 3/4th rice on top.Sprinkle some bista,nuts,raisins and chopped herbs.Add the remaining rice.Again garnish with bista,herbs and nuts.Sprinkle yellow colour or saffron milk on top.Cook it in a preheated oven at 160 to 180 deg cel for 45 to 50 mins.




Serve with raita,poppadums or pickles!!!!!!!!
