CLINT’S Thai Green Curry- Guest Post


Clint, my colleague at work, is  an excellent chef. Clint has a great interest in cooking especially Asian cuisines and his recipes are always simple, quick and delicious. The Thai green curry is one of Clint's own recipe.
Ingredients;
Cubed chicken fillets
1 large onion
1 green pepper
Chopped green chilli
Chopped red chilli
Garlic/ginger paste
Or 3 chopped garlic cloves and chopped ginger
1-2 tsp Thai curry paste
1 tbsp 7 Thai spice
Tbsp sugar
Juice 1-2 limes/lemon or jiff -
Tsp fish sauce
Fresh coriander
Fresh basil
1 tbsp Coriander powder
Cream/natural yogurt
1 tin coconut milk
1 tbsp Dried basil



-stir-fry onion, garlic, ginger and chilli for 2-3 mins
-add pepper and fry for 1-2mins
-add thai curry paste and stir
-add chicken and fry until brown
-add coconut milk, fish sauce, sugar and lime/lemon
-add 7 Thai spice and dried coriander and dried basil
-near end add cream/yogart and fresh basil and corriander
-season with salt (optional)
