Upside down pineapple cake and Aval Vilayichathu

Its been sometime I haven't posted any recipe.Christmas is here so I thought of baking a cake-An Upside Down Pineapple Cake.Usually Christmas cake is baked together by me and my H;and I love it.May be next year Aaron can join.
So lets start baking!!!!!!!!!






Ingredients:
Self-raising flour-200 gms
Sugar-150 gms;powdered
Butter-50 gms
milk-1/2 cup
Brown sugar-3 to 4 tbsp
Eggs-white of 3 and yolk of 2
Pineapple essence-2tsp
Canned pineapple -8 to 9 rings and pieces 1/2 cup
Red cherries-7 to 8






Beat the egg white till it peaks.Beat the butter and sugar together,then add the yolk and mix well.Now add the milk.To this slowly add the flour and mix well.Add the essence and the pineapple pieces.Now fold in the egg white till it mix well.Take a 9 inch baking tray.Place the pineapple rings at the base and the cherries in the centre hole of the pineapple rings.Sprinkle brown sugar on top.Pour the cake batter on the top.Preheat oven at 180 deg cel.Bake the cake for 40 to 50 mins till a skewer inserted into it comeout clean.remove the cake and let it cool down well.Hold a plate and invert it into the plate ;so that the pineapple rings at the bottom is on the top.






Serve with custard or jlt!!!!!!!!!




No its not the only recipe.I have some Aval Vilayichathu for you as well. I have used medium poha which  softens easily.








Ingredients;
Aval/Poha/Beaten rice-2 cups
Jaggery-150 gms
Coconut-grated-1cup
Sesame seed-3tbsp
Cardamom powder-1tbsp
Raisins-2tbsp
Broken cashews-2 to 3 tbsp
Water-3 to 5 tbsp.


Sprinkle water on the poha , add the coconut to this and mix well.Roast the sesame seeds and coarsely powder it in with a pestle in a mortar. Melt the jaggery to a string like consistency.Add the raisins and nuts and poha mix.Let it stay on slow flame;stirring continously.add the cardamom and sesame powder and mix well.
Ready to serve!!!!!!!!!!!

Just what I wanted! :) This Eid we went to a family friend's place and they served really delish upside down pineapple cake...but very vague with the ingredients' measurement. This looks just like that....and am sure it's really yummy!!! will try this soon n let u know!
